Mace

What is Mace?

Mace is a natural spice derived from the dried aril, or outer covering, of the nutmeg seed from the Myristica fragrans tree. In Indonesia, is commonly known as Fuli Pala. It has a warm, sweet, slightly spicy, and more delicate aroma compared to nutmeg, making it highly valued for food, beverage, bakery, seasoning, herbal, essential oil, fragrance, and pharmaceutical applications. Exporter references commonly describe mace as a dried layer with a shiny brown to orange-brown colour, spicy aroma, and distinctive aromatic profile.

Indonesian Mace Heritage

Mace has a strong connection with Indonesia’s historic spice trade, especially because it comes from the same tree as nutmeg, one of Indonesia’s most famous heritage spices. Indonesian mace is valued in international markets for its rich aroma, natural oil content, and versatile application across food and industrial sectors.

Indonesian mace is known for:

  • Warm, sweet-spicy aroma
  • Delicate flavour compared to nutmeg
  • Natural essential oil content
  • Attractive orange to brownish colour
  • Strong potential for food, herbal, fragrance, and essential oil industries

Indonesia’s tropical climate, fertile growing areas, and traditional spice processing methods support the production of aromatic spices such as nutmeg and mace, which are commonly used in food, pharmaceuticals, cosmetics, and essential oil applications.
